Baked Sweet Potato Fries

Aaron and I have been trying to eat healthier (and less "college student like").  Yesterday we had turkey burgers and baked sweet potato fries for dinner.  I'd never tried the sweet potato fries before, and I was really impressed with how they turned out.

 Baked Sweet Potato Fries


2 large sweet potatoes, peeled, sliced into wedges
5 T peanut oil
Salt
Ground black pepper

Adjust oven rack to lowest position, and heat the oven to 475.  Place potatoes in a large bowl and cover with hot tap water.  Soak for 10 minutes.  Meanwhile, coat an 18x12" heavy duty rimmed baking sheet with 4 T oil and sprinkle evenly with salt and pepper.  Set aside.  Drain potatoes.  Spread potatoes out on paper towels and thoroughly pat dry.  Place potatoes back in the bowl, and coat evenly with the remaining 1 T oil.  Arrange potatoes in a single layer on prepared baking sheet; cover tightly with foil and bake 5 minutes.  Remove foil and continue to bake until bottoms of potatoes are spotty golden brown; about 15 to 20 minutes, rotating the baking sheet after 10 minutes.  Flip each wedge over, keeping potatoes in a single layer.  Continue baking until fries are golden and crisp, 5 to 15 minutes longer, rotating pan if needed.
